Okay, so I’ve been wanting to try making this fresh black tea cream for a while now, and I finally got around to it. I gotta say, it turned out pretty darn good! Here’s how I went about it:
First things first, I gathered all my ingredients. I needed some good quality black tea leaves, heavy cream, sugar, and a bit of milk. I also made sure I had a saucepan, a strainer, and a whisk handy.
I started by brewing a really strong cup of black tea. I used about 2 tablespoons of tea leaves for 1 cup of water. I let it steep for a good 5-7 minutes to get all that flavor out. You want it strong, like, really strong.
While the tea was steeping, I poured about 1 cup of heavy cream into my saucepan. I added about 1/4 cup of sugar to it. I know some folks like it sweeter, but this was just right for me. I put the saucepan on low heat and stirred it gently until the sugar was all dissolved.
Once the tea was ready, I strained it into the saucepan with the sweetened cream. I added a splash of milk, maybe like 2 tablespoons. I whisked everything together until it was nice and smooth. Then, I took it off the heat and let it cool down completely. This took some time, so I just popped it in the fridge for a couple of hours.
After it was completely chilled, I took the mixture out of the fridge and poured it into a bowl. I used a hand mixer to whip it up until it formed stiff peaks, just like when you’re making whipped cream. You gotta keep an eye on it, it goes from liquid to whipped pretty fast.
And that’s it! I had this beautiful, fluffy black tea cream. I used it to top off some scones, but I bet it would be amazing on all sorts of desserts. It had this really nice, subtle tea flavor that wasn’t overpowering. Definitely a winner in my book!
