So, I’ve been on this mission to perfect my homemade chai, right? I mean, who doesn’t love a warm, spicy cup of chai on a chilly morning? Then, a friend of mine, who’s a total tea fanatic, suggested I try Assam tea. She said it’s known for its strong, malty flavor, which is perfect for standing up to all the spices in chai. I figured, why not? I was about out of ideas and getting tired of drinking bad chai.
I found a box of Assam tea at a local Indian grocery store, and I brewed up my first pot. I add the tea leaves, spices, milk, and sweetener to a pot and simmer it all together. It was messy, and I might have spilled some on the stove. Oops. Finally, I poured myself a cup and take a sip. Whoa. This was it. This was the chai I’d been dreaming of. The Assam tea gave it this amazing depth of flavor, and it wasn’t bitter or weak at all. It was perfect.
I’ve been using Assam tea for my chai ever since, and I’m never going back. I’m so glad I finally figured it out! It just goes to show that a little persistence, and maybe a good friend’s recommendation, can go a long way. Now, if you’ll excuse me, I’m gonna go make myself another cup of chai.
